Last week, we attended a travel trade show in the northern part of Italy where we met hundreds of Italian professionals from all over Italy. We then stopped by the Abruzzo area and we talked to one gentleman, owner of Abruzzo Cibus Culinary Tours, really stood out. Massimo chats with me about his company in 2009:
Tell us about the beautiful and undiscovered region of Abruzzo and the town in Abruzzo Cibus is located?

carunchio.jpgThe Abruzzo region is rich with history and nature. It is especially known for its combination of beautiful beaches and majestic mountains. You can stand on the side of one of the highest mountains in the Appenine range and look out over the Adriatic sea. It’s quite a sight! The beauty of Abruzzo is in the simplicity with which people still live their daily lives, and especially the authenticity in the delicious cuisine, not to mention the various historical sites dating back to Roman times. Abruzzo Cibus is located in a small village called Carunchio, which has a population of about 700 and dates back 1000 years. It is situated about half an hour inland from the coast but was isolated by the mountains until a couple of decades ago, which is why the customs are still unspoiled. It is characterized by the breathtaking view and the church bells that still tell the time for the locals. It is a very peaceful place where one can experience old world Italy while relaxing and enjoying the flavours of the surrounding vineyards, woods and artisan foods.

What is “the Palace” like where your guests stay?

foto palazzo 2 mini.jpgThe Palazzo was built around 1730 by a noble French wine merchant family (Tour d’Eau). It was abandoned after war times, until 2002 when we renovated it. It sits at the top f a rocky village hill and has a spectacular panoramic view of the whole valley. The palace has only 6 rooms, very large ones, this making your stay very exclusive and comfortable. Not the typical hotel, that’s for sure.



Do you have to be a professional chef or do you have a program just for tourists?

a.    “Pros only” is made exclusively for chefs (100% cooking).
b.    The second program, which is our best seller, is about cooking in the morning and touring in the afternoon. This is a more balanced program. You will learn how to make some wonderful Abruzzese dished, easy recipes and learn about the territory, always with a culinary emphasis.
c.    We also offer a program for those who want to exclusively discover the Abruzzo landscape without doing any cooking. We will show you in one week or less, all there is to see in this wonderful region. Eating at the most important restaurants. No cooking, just touring, eating and drinking Montepulciano wines.

What kind of an experience and memories will someone take away with them from Abruzzo?
ceramics.jpgWell,  in my opinion, the best way to understand a culture or a geographical area is with food. Every morning we will get our hands in the flour making homemade “pasta alla chitarra”, handling mozzarella, chopping ripe tomatoes, baking wonderful Abruzzese desserts and sipping on homemade lemoncello. Touring Abruzzo and discovering hidden spots like bell foundries, artisan prosciutto makers, cacaocavallo aging caves and more.

What are the costs for these tours?
It all depends on the length of the tour. We can start at 950 euros for a 4 day tour, that is all inclusive. That is upgradeable to a 7 day tour. We also offer, straight up half day cooking classes. We offer all kinds of flavours.
